  • 3 cups Honeycrisp apples - Peeled & thinly sliced
  • cup Brown sugar - Packed
  • ¼ cup White sugar
  • teaspoon Ground cinnamon
  • ¼ teaspoon Freshly grated nutmeg
  • 3 tablespoon All-purpose flour - Thickener
  • 1 tablespoon Lemon juice
  • ½ teaspoon Salt
  • 3 tablespoon Unsalted butter - Cut into small pieces for dotting
Crust
  • cups All-purpose flour - Plus extra for rolling
  • 1 teaspoon Salt
  • 1 tablespoon Sugar
  • 1 cup Cold unsalted butter - Cubed
  • 6–8 tbsp Ice water - Add 1 tablespoon at a time until dough forms
Secret Weapons
  • 1 Egg wash - 1 beaten egg + 1 teaspoon water
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Apple cider vinegar

Equipment

  • 1 9-inch pie pan (Glass or metal)
  • 1 Rolling pin
  • 2 Mixing bowls
  • 1 Saucepan (One large, one medium)
  • 1 Cutting board (For cooking juices)
  • 1 Sharp knife
  • 1 Wire rack (For peeling & slicing apples)
  • 1 Measuring cups/spoons (For cooling)

Method
 

  1. Cut butter into flour and chill the dough thoroughly

  2. Toss apple slices with sugar, spices, and let them release their juices
