  • 12 oz Chow mein noodles - Fresh or parboiled
  • 1 lb Chicken thighs - Boneless skinless, sliced thin
  • 1 cup Bean sprouts - Fresh
  • 1 cup Cabbage - Shredded
  • 1 Carrot - Julienned
  • 2 Green onions - Sliced
  • 2 cloves Garlic - Minced
  • 1 inch Ginger - Grated
  • 1 teaspoon White pepper
  • 2 tablespoon Soy sauce
  • 1 tablespoon Oyster sauce - Or mushroom sauce for vegan
  • 1 teaspoon Dark soy sauce - Adds color and depth
  • 1 teaspoon Sesame oil - Toasted
  • 1 teaspoon Cornstarch - Mixed with 1 tablespoon water
  • 1 teaspoon Chinese black vinegar - Optional Grandma's trick
  • 2 tablespoon Cooking oil - High smoke point e.g., avocado

Method
 

  1. Slice chicken, prep vegetables, and boil the noodles
