Ingredients
  

  • 6 large eggs - Room temperature
  • ½ cup cottage cheese - Full-fat gives best texture
  • ½ cup heavy cream or half-and-half
  • to taste salt - About ½ tsp
  • to taste black pepper - Freshly ground
  • 1 cup shredded cheese - Cheddar Swiss, or your choice
  • 4 slices cooked bacon or sausage - Chopped
  • 1 cup spinach - Fresh or thawed & drained frozen
  • ½ cup bell peppers - Diced
  • 2 stalks green onions - Sliced
  • optional garlic powder - ¼ tsp
  • optional dried herbs - Oregano thyme, etc., ½ teaspoon total
  • optional hot sauce - A few dashes
  • optional cream cheese - 2–3 tablespoon for extra richness

Method
 

  1. Preheat oven to low temperature and grease tin
