Honey Pie

This old-fashioned honey pie is a Southern classic with a silky custard filling made from real honey, eggs, and cream in a flaky homemade crust. It’s comforting, beautiful, and surprisingly simple to make.

Ingredients
  

For the Crust
  • 2 cups all-purpose flour - for crust
  • 1 cup cold unsalted butter - cubed
  • 1 tablespoon sugar - for crust
  • 0.5 teaspoon salt - for crust
  • 0.25 cup ice water - add slowly
For the Filling
  • 0.75 cup wildflower honey - or any pure honey
  • 3 eggs - room temperature
  • 0.75 cup heavy cream
  • 2 tablespoon unsalted butter - melted
  • 1 teaspoon vanilla extract - or vanilla bean paste
  • 0.5 teaspoon salt - for filling
  • 1 tablespoon cornstarch - for thickening
For Serving
  • whipped cream - for serving
  • extra honey - for drizzling

Equipment

  • 1 9-inch pie pan
  • 1 Large mixing bowl
  • 1 Wire whisk
  • 1 Measuring cups/spoons
  • 1 Rolling pin
  • 1 Fine mesh strainer

Method
 

  1. Cut butter into flour, add water, and chill dough before prebaking in the pie pan.
    Pie crust ingredients on a marble counter with soft daylight, including cubed cold butter, flour, whipped cream cheese, ice water, a jar of honey, and bowls of salt and sugar.
  2. Roll out chilled dough, fit it into a 9-inch pie pan, and blind bake until golden.
    Prebaked pie crust with crimped edges in a clear glass dish, lightly golden and ready for filling.
  3. Whisk eggs and slowly combine with warm honey and cream to make smooth custard.

  4. Pour filling into crust and bake until edges are set and center gently jiggles.
