Ingredients
  

The Bread Base
  • 1 Baguette - or sourdough
  • 2 tablespoon Olive oil - good quality
  • 1 clove Garlic - peeled
The Toppings
  • 3 Peaches - fresh ripe or firm
  • 6 oz Goat cheese - or other creamy cheese
  • ¼ cup Basil leaves - torn
  • 2 tablespoon Honey - raw; see notes for thyme
  • Sea salt - to taste
  • Black pepper - freshly cracked
Optional Extras
  • 1 cup Arugula
  • 2 tablespoon Balsamic glaze - for drizzling
  • 2 tablespoon Pine nuts - toasted
  • 4 slices Prosciutto - torn into strips

Equipment

  • 1 Serrated knife (For slicing baguette)
  • 1 Paring knife (For slicing peaches)
  • 1 Cutting board
  • 1 Baking sheet
  • 1 pastry brush (For brushing bread with olive oil)
  • 1 Grill or grill pan (Optional, for grilling peaches)

Method
 

  1. Slice baguette, brush with olive oil, toast until golden, and rub with garlic while warm.

  2. Mix honey with fresh thyme and let infuse while prepping the rest.

  3. Wash, slice, and lightly salt the peaches. Optionally, grill for extra flavor.
  4. Spread goat cheese on toasts, add peach slices, basil, and drizzle with the infused honey.
